Big Fat Veggie Quesarito (hack from Chipotle's Secret menu)

I guess you make a quesarito when you can’t decide if you want a quesadilla or a burrito! It is a perfect combo to give you the best of both worlds. Not many people know but this item is on the Chipotle's secret menu. I have never ordered it because employees hate making it since it takes longer to make compared to their other menu items. Making it at home takes some prep work but the end result is worth it. I am not going to write too much because I know you just want to get to the recipe! Hope you love it as much as I do :)


Big Fat Veggie Quesarito

Ingredients:

Prep time: 25 -35 minutes || Cook time: 10 minutes || Total: 45 minutes || Yields: 3 - 4 quesaritos


Ingredients

Rice

  • 1 box of Lundberg organic Chile Verde Rice (I found it at Whole Foods)

    • This brand does not have any chicken/meat stock ingredients



Beans

  • 1 can of 15.5 oz black beans

  • ½ teaspoon oil

  • ¼ cumin seeds

  • 2 teaspoon adobo chipotle sauce (prefer La Costena brand)

  • 1 teaspoon taco seasoning (prefer Old El Paso brand)

  • ¼ teaspoon garlic powder


Veggies

  • Half red pepper (sliced)

  • Half green pepper (sliced)

  • Half red onion (sliced)

  • 1 jalapeno (diced)

  • 1 teaspoon Mexican fiesta seasoning (Whole Foods)

  • 2 teaspoon taco seasoning

  • 2 teaspoon black pepper

  • 1 teaspoon adobo chipotle sauce

  • 1 cup mexican cheese/cheddar cheese

  • 1 avocado sliced

  • ½ cup store bought salsa (prefer Trader Joe’s homestyle salsa especial)

  • 6 flour tortillas


Instructions:

Rice:

  1. Start your rice first, the brand I suggested takes about 30 minutes for it to cook - followed instructions on the back of the box

  2. Can make it at home: mix 2 cup cooked basmati rice with 1.5 tablespoon lime, ½ tablespoon garlic powder and ½ tablespoon taco seasoning and mix it all together


Beans:

  1. Wash black beans

  2. Heat small pan with oil

  3. Once hot, add cumin seeds (wait till it gets a little brown/splutters - about a minute)

  4. Add the beans

  5. Add ¼ cup water (enough for half of the beans to be covered)

  6. Add adobo chipotle sauce, taco seasoning, garlic powder

  7. Mix it all, wait till beans get hot


Veggies:

  1. Add ½ tablespoon oil

  2. Add all the veggies

  3. Add taco seasoning, adobo sauce, black pepper, Mexican Fiesta seasoning

  4. Stir it and cook until slightly soft but still crispy (about 5 minutes on medium - heat)


Now the fun part- Assemble :)

  1. Heat nonstick pan over medium- high heat

  2. Place one tortilla on microwave safe plate, add Mexican/or cheddar cheese all over.

  3. Place second flour tortilla on top and warm it in microwave for 30 seconds - 1 minute (until the cheese melts between the tortillas)

  4. Top the center with beans, rice, veggies, avocado, salsa and sprinkle more cheese

  5. Roll it up in a burrito

  6. When pan is hot, spray with oil and place quesaritos, until outside is golden, flip and cook other side

  7. Enjoy!



Homemade quesaritos are pretty flexible when it comes to picking your ingredients. If you don't like black beans, you can always use refried beans, pick and choose your veggies, adjust flavors of seasonings to your preference, add sour cream etc. Hope you guys enjoy your Big Fat Veggie Quesaritos, don't forget to tag us @lifebyfour when you make it!
